Molten Chocolate Cake Recipe

This is a wicked awesome dessert that I found in Woman's Day magazine.  I like that you can make just two small desserts at a time.  I had to buy ramekins, but you can buy a pair of them for under $6.

Ooooohhhh yeah, chocolate!

Molten Chocolate Cakes
4 tablespoons unsalted butter, plus more for the ramekins
1 tablespoon flour, plus more for the ramekins 
1/3 cup bittersweet chocolate chips
1 large egg 
1 large egg yolk
2 tablespoons granulated sugar
confectioners sugar

Heat oven to 450 F.  Butter two 6 ounce ramekins and dust the insides with flour.

Place the butter and chocolate in a glass bowl and microwave on high in 20 second intervals, stirring after each, until melted and smooth.

Using an electric mixer, beat the egg, egg yolk and sugar in a medium bowl until thick and lighter in color, for about 1 minute.  Add the melted chocolate mixture and flour and beat until fully incorporated and smooth.

Divide the batter between the prepared ramekins.  Bake until edges are set and the center still jiggles slightly, 8-10 minutes.  Let stand for 15 seconds.  Run a knife around the edge, then invert each cake onto a plate.  Dust with confectioners' sugar. 

This dessert is sooooooo yummy!! I like that we can make just two at a time; with just a few ingredients.

This is the fancy-shmancy photo from Woman's Day.  Mine didn't come out looking as fancy. It was a little difficult to get the cakes out of the ramekins without breaking them.  In any case, it was wicked good!
