Simple Spicy Pumpkin Seed Recipe

Every year, we carve a pumpkin with Handy Boy to put out on the steps for when the Trick-or-Treaters come.  I've baked pumpkin seeds before, but this year I tried a different recipe.  I improvised a bit. They came out WICKED good!

Wicked Good Pumpkin Seeds
Rinse pumpkin seeds under cold water, and wash out the pulp and strings.  Pat the pumpkin seeds dry with a paper towel.  Put seeds into a bowl.  Stir in just a tiny bit of oil, and add spices: I added a bit of salt, a dash of onion powder, and a dash of seasoned salt.  Any brand will do, experiment with what you have.  Just a dash of spices, though.  Don't overdo it!

Mix together, then place them in a single layer on a baking sheet. Bake at 325 for about 30 minutes.  Let cool, and store them in an air-tight container.

IF there are any left, that is. 
I love my Silpat baking sheet!  Makes for easy clean up.  Handy Boy even ate the pumpkin seeds this year.  I think my previous attempts were too "bland" for him, he liked this spicier version.

I love roasting pumpkin seeds! I usually just add salt to mine. This sounds great. :)

I love roasted pumpkin seeds. They make for a great little snack.... and plus it usually means there's pumpkin pie somewhere :)

I made some pumpkin seeds, but I just used salt. Your recipe sounds SO much better!
